No Sugar, But SO MANY EGGS!
On with the Fed Up No Sugar Challenge…
While I may be eating no sugar this week, I’m having another omelette for lunch today and starting to wonder if it’s okay to eat the amount of eggs I’m eating. I’m having at least one egg a day and on many days, two eggs. But right now, these spinach, mushroom, and tomato omelettes I’m making have been a great breakfast or lunch. Some mornings I have a fried egg. Some days I’m having a hard-boiled egg in tuna salad. Is it healthy to eat that many eggs?
That’s my main challenge at this point — finding a variety of things to make for meals. I’ve discovered many websites and searched on the mecca of recipes, Pinterest, for no sugar meals, and guess what? I don’t know what constitutes sugar for some of these people, but a lot of these recipes have plenty of sugar.
I did find another new no sugar recipe that we really liked though, so I’ll share it here. It was from Allrecipes.com; a site I use a lot. It’s for trout, and as much as I love seafood and cook fish at home frequently, I don’t remember cooking trout before. Not for a long time, anyway. We liked it and it was easy —
Trout Amandine
Ingredients
• 4 skinless trout fillets (5 – 7 ounces each)
• salt and pepper to taste
• 1/4 cup all-purpose flour
• 4 tablespoons butter
• 1/2 cup slivered almonds – (I used a little more because I had them and we like them)
• 2 tablespoons lemon juice
• fresh minced parsley
Directions
1. Rinse and pat dry trout. Season with salt and pepper to taste. Dredge trout in flour.
2. Heat 2 tablespoons butter in large skillet over high heat until melted. Add trout and brown both sides. Lower heat to medium and cook for about 5 minutes on each side or until cooked through. Remove trout to a serving plate and keep warm.
3. Wipe out pan and add 2 tablespoons butter. Cook butter over medium heat until it just begins to brown. Add the almonds and brown.
4. Pour sauce and almonds over fish and sprinkle with lemon juice and parsley.

Another thing I’ve been surprised to learn —
I didn’t realize that a lot of deli turkey has added sugar. My local Kroger sells Boar’s Head meats, and I’ve learned that they do offer several varieties with no sugar. My favorites right now are Mesquite Smoked and Cajun.
Yesterday for lunch, I had a few slices of Boar’s Head Mesquite Smoked turkey, rolled them up with a couple of slices of swiss cheese, and had these with a side salad. It may not be the most delicious lunch I’ve ever had, but it was filling, healthy and good.
Oh! I also want to say that as the most reluctant participant in our family’s no sugar challenge (mostly because I’ve been around long enough to know this wasn’t going to be as easy as everyone else thought), I’m the ONLY one who hasn’t strayed at this point. At all. So YAY — gold star for Mom.
